King Salmon and Tomato Cucumber Truffle Salad
Best welcome home ever: fresh feeder king! Of course that's second to a warm embrace from my partner. After an extended weekend of family events in southern California I came off the plane tired of travel, socially overloaded, and in need of fresh simple food. Lucky me, my partner's father just went fishing out of Seward and gifted us with feeder king and halibut.
A late dinner of grilled salmon, roasted potatoes, and truffled-up tomato cucumber salad.
Salmon: Completely done by my partner, so I'll try to get this right and do him justice!
1 C low sodium soy sauce
2 tbs brown sugar
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp chili powder
Mix up and let the fish sit in it for an hour or so. We had two good sized thick fillets and well as some yummy bits. Pat dry with a paper towel before putting on the grill.
1 1/2 cup mixed cherry tomatoes halved
1 cucumber quartered and chopped
sprinkle oregano and pepper over the tomatoes and cucumber
drizzle truffle oil over the mix
finish off with a sprinkle of truffle salt
It feels so good to be back! My favorite parts of the descent into Anchorage are the mountains, the water, glaciers, and the windmills of Fire Island.
