Breakfast Scramble from Shish Kabob leftovers

Ever have an amazing meal with tons of leftovers? The first thing on my mind is, 'Yay, scramble tomorrow!'.  This past Friday my partner's mom made an amazing dinner of shish kabobs and sent us home with left overs.  Saturday morning I de-skewered it all, cut it into small chunks and threw them into a pan with olive oil. Scrambled up some eggs, mixed aged cheddar cheese into the eggs, and then poured the mixture into the pan with the left over shish kabobs goodies. Sprinkled some salt and garlic powder in the mix and done!

 

I like to mix my cheese in the eggs before I cook them because I feel like the cheese really cooks into the eggs and develops into a richer flavor.
