French Toast with whatever is in your fridge style

Weekend mornings are jewels within my weekly repertoire. I take the pups out, get the house nice and toasty warm, brew some coffee, and then rummage through the fridge to see what is on the menu for breakfast.

:: two very dry, week old, challah knots, buttermilk, exactly 4 eggs, heavy cream = French Toast!

I also had four pieces of bacon and some very ripe fr...

The Spanish Tortilla

My first memory of a Spanish tortilla was one of confusion and distaste. I was perhaps 10 and in the land of Spain for a family trip to visit my Dad's childhood friend. We were taken out to experience the taste of real Spanish food among which included the tortilla. This tortilla did not equal the tortilla that I knew so well from tacos and as a young kid it is hard to discern that these are two completely...

Creating with fresh produce never fails to entice amazing flavors. I love coleslaw, but not specifically the mayo-y traditional kind. I grew up eating a slaw made with dill, dried mustard, and sour cream. So, perhaps my traditional slaw turned me on to the not-so-traditional versions of this American staple. This simple slaw goes great with some fresh salmon tacos topped with black beans, avocado, cila...

I grew up taking epic camping trips every summer. Some of the more memorable ones include crossing the states from California to Virginia on multiple longitudinal routes. I remember the grilled tuna steaks, hobo packets, frito pies, banana boats, s'mores, but not one hotdog. I'm sure there were many hotdogs in the mix, but apparently not so memorable.. And so, I have developed a strong opinion that camp food does not equal hot...

My family celebrates birthdays, mother's days, and father's days by cooking the celebrated person's favorite foods. This year's father's day was a little unconventional because our guest of honor, my Dad, happily provided the main dish: a lovely jack king salmon that he caught earlier in the week.

Jack King Salmon | Generally king salmon are salmon who spend about 3-8 years out in the ocean before they come back into rive...

summer = fresh catch of homer halibut

This weekend we received about 10 pounds of fresh caught halibut, from my partner's father! So: bring on the halibut making brainstorm sessions. This dinner was a delicious one, but rather odd because we made a poaching sauce out of the randomest things we had on hand. Really you can poach the halibut in something as simple as broth, but last night our creative juices weren't really up for...

salt cod, potatoes, and onions

or in this case: fresh cod, potatoes, and tomatoes

I've heard stories from back-in-the-day about how salt fish was a common form of perserving when refrigeration was not readily available. Especially dry cabins in Alaska. Those stories highlighted the amazing flavor of the fish and the yearning to experience it once again. From observation, now days salt fish is rarely made or consumed because we c...

Cooking lessons commence: I was just introduced to a lovely meal that my partner grew up with and has so graciously taught me how to make. Poor Man's Lobster. Folks, this is a not so poor, amazingly yummy, rich and fulfilling food. Perfect for the breezy cold weather that May is providing the Anchorage area. And perfect for the freshly caught halibut that is rolling in. Pair with a light salad because you're going to want to e...

King Salmon and Tomato Cucumber Truffle Salad

Best welcome home ever: fresh feeder king! Of course that's second to a warm embrace from my partner. After an extended weekend of family events in southern California I came off the plane tired of travel, socially overloaded, and in need of fresh simple food. Lucky me, my partner's father just went fishing out of Seward and gifted us with feeder king and halibut.

A late dinner of gr...

A united front. I love that phrase. To me it means that even though there might be differences in an entity as a whole it shows one front, one message, one mission. That takes understanding, humility, and cooperation from individuals of said entity. I sit and think about this as I wait for my Community Council Board meeting to start. I'm super excited to be part of an organization that has the opportunity for a 'voice of the p...
